2. Slow principles

Agricultural activities enable us to meet the objectives of our social mission and provide jobs and work placements for people in social disadvantage by offering them an opportunity for social integration or redemption. Adopting the practices of organic farming  we try to restore a balanced ecosystem that allows us to produce  without the use of chemicals and poisonous excesses.
In our park, an area of about two hectares,  we also work to restore a natural environment full of native biodiversity of our landscape of trees, meadows, hedges and animals that inhabit them (birds, small mammals, beneficial insects to natural balances) often attacked by intensive farming.

We produce, with passion, organic bread kneaded by hand and baked in a wood oven. “I was born near Como, even though my family came from St. Gallen, Switzerland. My Swiss ancestry, in a country with strong rural traditions and where you do not throw anything away have influenced my choice to produce  organic bread.
For me it is terrible to read how much bread is thrown away every day in our country. This is why we make our “organic bread” a kind of “long-life bread.”

2. SLOW principles

All ingredients are organic.  We use more digestible organic flours for human organism and that make it possible to preserve bread for more days.
